This is my favorite honey cake recipe. I make it every year because it is not only a little healthier than a normal white flour cake but it is easy to make and even those who don't like honey cake eat it up.
1 cup honey or date honey
½ cup vegetable oil
3 eggs
½ cup orange juice concentrate, undiluted
½ teaspoon vanilla extract
2 ½ cups whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 cup mashed sweet potatoes or yams
1 cup chopped walnuts
In a large bowl, blend honey and oil until fluffy. Beat in eggs one at a time, stir in orange juice concentrate and vanilla.
Combine the next five ingredients in another bowl. Blend into the liquid mixture alternately with the mashed sweet potatoes. Stir in chopped walnuts.
Turn batter into a 10 by 4 inch tube cake pan or a Bundt cake pan. Bake in preheated 300 degree oven for one hour or until cake tester or toothpick comes out clean.
